I have always had a passion for cooking and baking from an early age. I started working in a kitchen when I was 15 years old, during school holidays and at weekends.
After graduating from the Dublin College of Catering, and before joining Sodexo in 1995, I worked as a sous chef in a leading Wicklow restaurant.
I gained valuable experience in a high pressure environment with a high standard of customer care. I have applied this same professionalism/ ethos in my head chef role with Sodexo.
I head a team of five who cater daily for 700 people at a prestigious secondary school in Dublin. I also organise and cater for numerous special events and, since 2010, have hosted Sodexo’s national culinary competition each year.
I have embraced the fresh food from scratch concept and enjoy working with fresh produce, creating varied, nutritious and healthy dishes on a daily basis.
I strongly believe you never stop learning and gaining experience and should strive for excellence at all times.
