I was appointed as executive development chef in January 2013 having previously worked for Historic Royal Palaces as executive chef, where I oversaw the introduction of a Best of British theme across all the sites, and before that the O2 Arena, where I was responsible for over 80 chefs.
I believe that the best training for chefs is to see first-hand where the food they are using originates so I ensure our chefs get the opportunity to visit suppliers regularly. I am passionate about using the best ingredients available to create unique, seasonal menus that get children excited about food.
