James Tanner inspires the chef scholars

One of the highlights of the independents by Sodexo Chefs’ Scholarship scheme is the chance to gain expert guidance from chefs at the top of their game.

Celebrity chef James Tanner and his brother Christopher turned over evening service at their award-winning pub The Kentish Hare to the Chef’s Scholarship cohort as part of a fine dining master class.

The chefs were challenged to create a full menu from ingredients provided by James consisting of six parts, including: canapés, starter dish, fish course, main course, pre-dessert course and dessert.

Each chef took responsibility for a different course which was then served to Sodexo Schools and Universities managers.

“For them it was a really good think-on-your-feet type session,” said James.

“Each person involved went out into the restaurant and introduced their course.  They told the diners what was in the dish, how they came up with it and how we cooked it.  Then we matched the wine – so it was really a good gastronomic event.”
